Mini Christmas Cakes

These make delicious little gifts, or serve as a place setting for each guest. To make the stars for the cakes, we used the medium- and large-sized cutters from the FMM set of three available from Squires Kitchen.

 
 
 Mini Christmas Cakes

  Makes 8

Ingredients
 6 x 3 inch (15 x 7.5 cm) piece of fruit or all-butter Madeira cake
 icing sugar, for dusting
 41/2 oz (125 g) Ready to Roll Regalice white icing
 2 oz (50 g) Professional Regalice Baby Blue icing
 8 silver balls, to decorate

You will also need a 1/14 inch (3 cm) and a 11/2 inch (4 cm) star cutter.

Method

Begin by cutting the cake into 8 x 11/2 inch (4 cm) square blocks. Then, on a surface lightly dusted with icing sugar, roll out the white icing to the thickness of a £1 coin. Cut out 8 x 11/2 inch (4 cm) squares of icing, lightly brush the top of the cakes with cool, boiled water and top with the icing squares. Now cut out 8 x 11/2 inch (4 cm) white icing stars.

Next, roll out the blue icing to the same thickness and cut out 8 x 11/2 inch (4 cm) stars. Lightly brush one side of the stars with water then press a blue star on top of each cake, followed by a white star on top of that. Finally, press a silver ball into the middle.
