This must be one of the greatest salad recipes ever. It's traditionally made with Cos lettuce, but I like a mixture of lettuce and some crunchy rocket leaves. What it can't take is anything too soft – only the crunchiest leaves will do.
This is a classic English version of a fruit cobbler, but speeded up with the aid of a food processor – which makes it one of the fastest baked fruit desserts imaginable.
In summer, if the weather is really hot, nothing could be more refreshing than a chilled soup. Leeks, which have made this particular recipe famous, are not available in summer, but this alternative is, I think, even better. It's made using fresh lemon grass.
For those who get nostalgic for the rice puddings of their childhood, this is the adult answer, a more sophisticated and modern interpretation. Later on in the summer different fruits can be used for the purée – blackcurrants, raspberries or redcurrants, or any other combination.
This is my adaptation of a classic French dish called poulet au vinaigre. It's very simple to make: the chicken is flavoured with tarragon leaves and simmered in a mixture of sherry vinegar and medium sherry without a lid, so that the liquid cooks down to a glossy, concentrated sauce.
