UKTV Food is currently showing Delia Smith's Summer Collection, including these excellent recipes from episode 7.
Angel-hair pasta (capellini) is, as the name suggests, the very finest shreds of pasta, now available in larger supermarkets. Large prawns also come in packs, peeled with the tails intact: the very large varieties come in eight per pack, the smaller ones in 12 per pack.
This dark, pungent curry paste makes a delightful alternative to dry, ground spices. I have included it in the recipes for Angel-hair Pasta with Thai Spiced Prawns, Thai Fish Cakes with Cucumber Dipping Sauce and Baked Thai Red Curry Chicken with Coriander Chutney, so it's best to make it in bulk, freeze and use it as and when you need it.
This is one of my favourite curries, made extra special by the use of fresh coconut, half of which goes into the curry and the rest used to make the sambal.
If you have some Thai Red Curry Paste to hand, these little fish cakes make a wonderfully different first course, especially if the rest of the meal has a spicy theme.
This is a summery, fairly simple cake that is particularly great for summer baking. Coconut milk powder is sold via www.the-tryst.co.uk and in some branches of Tesco and independent stores.
