Prawns Creole
– How to CheatJust discovered a great ingredient – Oz Fish prawns. Yes they’re really called just that. They come, as you would expect, all the way to Sainsbury’s from Oz, where they get frozen at sea to keep all their firm texture and great flavour. They’re also extra-large and juicy. We have grilled them and pan-fried them and they are, without doubt, a cut above all the rest. So for our cheat’s recipe we’ve taken some artistic licence and also a jar of Sacla whole cherry tomato & chilli sauce, which is truly lovely. Forgetting it’s actually Italian, we’ve transformed it into Prawns Creole. Serve with basmati rice and some lemony dressed salad leaves and quick cheat's suppers don’t come much better.
Serves 2
1 green chilli, de-seeded and chopped small
1 green pepper, de-seeded and chopped small
1 large onion, chopped small
1 tablespoon olive oil
1 large clove garlic, crushed
1 x 250 g pack Oz Fish extra large ‘peeled tail-on’ frozen Australian banana prawns, defrosted
1 x 350 g jar Sacla Whole Cherry Tomato & Chilli Sauce
5 fl oz (150 ml) dry white wine
salt and freshly milled black pepper
2 spring onions, including green parts, finely chopped
If you have the mini chopper, recommended last year, great – you can make light work of the chilli, pepper and onion (see information at the end of the recipe). Then start off by heating the oil in a large frying pan, and when it’s hot add the chopped ingredients. Cook these over a medium heat for five minutes before adding the crushed garlic. Carry on cooking for a further five minutes until the onion and pepper have softened.
Now move them over to the side of the pan and add the prawns to cook for a couple of minutes to colour them (turn each one over after a minute). When they’ve turned pink, mix them together with the chilli, pepper and onion, then add the contents of the jar of sauce.
Then measure out the white wine and add that to the pan. Give everything a good stir, season with salt and pepper, then leave to cook gently (uncovered) for about 10 minutes until the sauce has thickened slightly. Serve with rice and salad and the chopped spring onions sprinkled over.
