|110g self-raising flour|
|1 slightly rounded teaspoon ground ginger|
|1 level teaspoon bicarbonate of soda|
|40g granulated sugar|
|50g block butter, at room temperature|
|50g (or 2 tablespoons) golden syrup|
|Pre-heat the oven to 190ºC, gas mark 5|

This recipe is from Delia's Cakes
Sift the flour, ground ginger and bicarbonate of soda together into a mixing bowl, add the sugar, then lightly rub in the butter till crumbly.
All you do now is simply add the syrup and mix everything to a stiff paste. No liquid is needed because the syrup will be enough to bring the mixture to the right consistency.
Now divide the mixture into quarters, as evenly sized as possible, then each quarter into four, and roll the pieces into little balls.
Next place them on the baking sheet, leaving plenty of room between them because they spread out quite a bit. Then just flatten them slightly (to about 1.5cm) and bake near the centre of the oven for 10–15 minutes by which time they will have spread themselves out and will have a lovely cracked appearance.
Cool them on the baking tray for 10 minutes or so, then transfer them to a wire rack to finish cooling and store in an airtight tin

I think these twice-baked, very crisp biscuits are great for children to make and eat. After that, the adults in true Italian fashion sit down with a glass of chilled Vin Santo, and dip them into it before each bite.
If you like chocolate and orange as a combination, then forget Jaffa Cakes. These are in a completely different class.
These have always been personal favourites, and in this edition we have added chopped crystallised ginger and made them even better.
If there was such a thing as a prize for the very best biscuit in the world, one bite of a Florentine would tell you this was the winner. Absolutely top drawer and perfect if you want to give a special homemade present at Christmas.
Still lovely after all these years. Still popular with children and with everyone else.
This very well-behaved dough can put up with quite a bit of punishment, and is therefore ideal for children to play around with. You can buy proper cutters for making ‘men’ but in fact you (or your children) can pick any shaped cutter you like.
These are the quickest and easiest biscuits I have ever made: they have a nice crunch and a toffee taste. A friend recently reminded me of these, so we tried them again and decided, yes, they absolutely had to be included.
