Devilled Chicken Drumsticks

Supermarkets and good butchers do very reasonably priced packets of chicken drumsticks.

Method

Start by arranging the chicken drumsticks in a single layer in the grill pan with the grid removed; then, using a skewer, stab the joints in several places. Now in a mixing bowl combine all the remaining ingredients together and stir thoroughly until smooth.

Pour this mixture over the chicken and turn the pieces around in it. Then leave it, covered with foil, in a cool place for a minimum of 3 hours – or much longer if you like. 

To cook, preheat the grill and then grill the chicken for about 15-20 minutes, or until the drumsticks are cooked. Keep turning them fairly frequently to prevent them burning, and serve very hot with any pan juices spooned over. Pilau rice cooked with added chopped onion and green pepper is nice with this.
