We'd defy anyone to say they don't like Italian food! Delia's recipes cover everything from a dazzling array of pasta dishes through to pizza and such classics as Veal Milanese, Beef in Barolo and Chicken Cacciatora, a recipe that's become a firm favourite at Delia Online.
For me, mussels are still a luxury food that cost very little money. I don't think anything can match their exquisite, fresh-from-the-sea flavour. In this recipe every precious drop of mussel juice is used, which gives a lovely, concentrated flavour.
Serve these pretty little wafers with any ice cream, but particularly pistachio. They can be stored in an airtight tin, giving you plenty of opportunities to indulge!
This wonderful, oven-baked risotto is a treat for vegetarians and slimmers alike: Delia has unearthed an ingredient that adds creaminess without calories. Bet you can't guess what it is!
Focaccia is an Italian flat bread made with olive oil. The flavour of the oil is important, so it's advisable to use a good, strong, fruity virgin olive oil for this.
Little Italian dumplings made from potato, flour and egg are a great vehicle for carrying other flavours. Here, Delia has used spinach and cheese for a vegetarian version, but you can try other variations too.
Not East meets West this time, but Italy meets Britain. Take a classic Italian sauce, add it to some mash (without the bangers) and what you have is a wonderful accompaniment to fish.
Ricotta and Gorgonzola make the perfect combination for this dish but, if you can't find ricotta, cottage cheese will make an excellent alternative. This is quick, simple and delicious.
In this recipe the pasta, along with the other ingredients – aubergines, tomatoes, Mozzarella amongst other things – are finished off for a few minutes in the oven.
If you want a light meal in a hurry, then this will take you barely fifteen minutes from start to finish. If you're extra hungry, I suggest you use 2 oz (50 g) of pasta.
To make this sauce, you need the other half of the Mixed Double recipe, Cheese and Herb-crusted Cottage Pie (see related recipe below), which will provide you with just the right quantity of cooked minced beef.
