Chicken Tonnato
When I started learning to cook, I discovered early on that the key was shrewd marketing: good ingredients meant good cooking. Now that there aren’t as many markets and we have far less time for cooking, the seasoned cheat needs to be a very switched-on and shrewd shopper. Seeking out the very best short-cut ingredients, however, is as time-consuming as real cooking. So, on your behalf, we are on the case. This week, after some side-by-side tastings, we are pleased to announce that if you’re buying ready-cooked chicken Tesco’s is quite definitely the tops, and for bought mayonnaise Waitrose stock the star Delouis et Fils or failing that Benedicta gets the runner-up vote. All this adds up to a quick, simplified variation on a great Italian classic – perfect for a hot summer's day.

Method
First of all, put the mayonnaise in a food processor or mini chopper.
Then drain the tuna and add that along with the anchovy fillet. Rinse and drain the capers and add those too. Now whiz everything together till smooth, add 3 tablespoons of cold water and whiz again.
Next do a bit of tasting and season with lemon juice and pepper. Now, remove the skin from the chicken breasts and slice them very thinly lengthways. Arrange the slices in a shallow serving dish, then spoon the sauce over the chicken.
Garnish with thinly sliced anchovy fillets in a zig-zag pattern on top of the sauce, scatter over a few capers and serve with the lemon slices.Serve with a lemony salad of crisp lettuce (like Cos) along with some rocket or watercress, plus some hot new potatoes.
