Freezing: Vegetable dishes

 

It's possible to freeze quite a few of Delia's vegetable dishes, especially potatoes in all their guises, allowing you assemble a meal much more quickly. 

Aligot (Mashed Potatoes with Garlic and Cheese)
Make as per the recipe. Freeze in a container with tight-fitting lid. Freeze for up to 3 months. Reheat in a bowl over a pan of simmering water. 

Barbecued Sweetcorn
Not suitable for freezing. 

Bashed Neeps and Carrots
Not suitable for freezing. 

Braised Peas, Rocket and Spring Onions
Not suitable for freezing. 

Brussels Sprouts in Riesling with Bacon
Not suitable for freezing. 

Bubble and Squeak Rösti
Make the rösti as per the recipe, without cooking them. Interleave them with clingfilm or baking parchment, and freeze in a rigid container for up to 3 months. 

Buttered Jersey Royals with Parsley, Mint and Chives
Not suitable for freezing.

Cabbage with Bacon, Apples and Cider
Not suitable for freezing. 

Cauliflower with Two Cheeses and Creme Fraiche
Not suitable for freezing. 

Colcannon Potatoes
Cool the prepared sauce at room temperature. Freeze in a plastic container with tight-fitting lid, allowing enough headspace for expansion. Freeze for up to 3 months. Defrost in the fridge overnight. Reheat thoroughly before serving. 

Crunchy Roast Potatoes with Saffron
Not necessary to freeze. However, if you want to cook extra for freezing, cool and open-freeze before storing in polythene bags. Best reheated from frozen either in an oven or, preferably, deep fried. 

Fried Cabbage with Bacon
Freeze in a separate polythene bag which has been sealed well, or in an airtight rigid plastic container. Defrost in the fridge overnight, then reheat in a frying pan, or in a covered ovenproof dish in the oven until piping hot. 

Gratin Dauphinois
Suitable for freezing but better made fresh due to reheating time. 

Green Parsley Mash
Cook as per the recipe and cool completely. Freeze in a foil container for up to 3 months. Defrost overnight in the fridge and reheat in the foil container in the oven. 

Lemon Parsley Potatoes
Cook the potatoes for about 15 minutes so that they are slightly undercooked, then freeze in sealed polythene bags. Cook from frozen for about 10 minutes or until tender. Complete the recipe. 

Mashed Potato with Sage
Complete the recipe and leave to cool at room temperature. Freeze in a foil container with a tight-fitting lid. If freezing mashed potato in portions, use sealed and labelled polythene bags. Freeze for up to 3 months. Defrost overnight in the fridge, and reheat in the foil container in the oven at gas mark 4, 350°F, 180°C.

Mashed Potato with Three Mustards
Complete the recipe and leave to cool at room temperature. Freeze in a foil container with a tight-fitting lid. If freezing mashed potato in portions, use sealed and labelled polythene bags. Freeze for up to 3 months. Defrost overnight in the fridge, and reheat in the foil container in the oven at gas mark 4, 350°F, 180°C. 

Oven-roasted Carrots with Garlic and Coriander
For best results, do not freeze. 

Oven-roasted Chunky Chips
Not suitable for freezing. 

Oven-roasted Potatoes with Garlic and Rosemary
Not suitable for freezing. 

Oven-roasted Winter Vegetables
Not suitable for freezing.

Parmesan-baked Parsnips
Freeze and allow to defrost fully before roasting as in recipe. 

Perfect Mashed Potato
Not suitable/necessary for freezing.

Perfect Roast Potatoes
Not necessary to freeze. If you want to cook extra, however, cool and open-freeze before storing in polythene bags. These can be reheated from frozen in an oven but are even better if deep-fried. 

Potato Chips with Red Onion, Tomato and Chilli Relish
Not suitable for freezing. 

Potatoes Boulangeres with Rosemary
Once cool, freeze either in foil containers or in a container with a tight-fitting lid. Reheat from frozen. 

Purée of Potato and Celeriac with Garlic
Not necessary to freeze. 

Purple Sprouting Broccoli with Chilli and Sesame Dressing
Not suitable for freezing.

Quick Stir-fried Spiced Red Cabbage with Apples
Cook as per recipe and cool completely. Freeze for up to 3 months, Defrost in the fridge overnight. 

Quick-Braised Celery
Cook as per recipe and cool completely. Freeze for up to 3 months. Defrost overnight in the fridge. 

Roasted Roots with Herbs
For best results, do not freeze.

Sauteed Caramelised Fennel
Not necessary to freeze. 

Spiced Roast Parsnip Chunks with Coriander Chutney
Not suitable for freezing.

Traditional Braised Red Cabbage with Apples
Freeze the cabbage in a plastic container or polythene bag. Reheat from frozen in the oven until hot throughout.

Watercress and Caper Mash
Not suitable for freezing.
