Freezing: starters, light lunches, snacks and party food

 

This section is a cornucopia of recipes that fit into different slots, from canapés at parties to snacks and starters.

Anchoïade with Toasted Goats' Cheese Croutons
Not suitable for freezing. 

Antipasti
Not suitable for freezing. 

Aubergines Stuffed with Moussaka
Bake as per the recipe. Leave to cool completely at room temperature, then open-freeze until solid. Wrap well in clingfilm and foil and freeze for 3 months. Defrost overnight in the fridge. Remove the clingfilm and reheat, covered in foil, at gas mark 4, 350°F, 180°C for 40 minutes until piping hot. 

Avocado Mousse with Prawns and Vinaigrette
Not suitable for freezing. 

Blinis with Smoked Salmon, Creme Fraiche and Dill
Make blinis as per the recipe but cool quickly by placing on a wire rack. Wrap in foil to form parcels of 6. Freeze for up to 3 months. Defrost overnight in the fridge. To reheat, preheat the oven to gas mark 1, 275°F, 140°C, place the parcels on the oven shelf and heat through for 10 minutes. Serve as per the recipe. 

Boston Baked Beans
Make the beans as per the recipe, the leave to cool at room temperature. Freeze in a rigid container with lid (or see general freezing tips). Freeze for up to 3 months. Defrost overnight in the fridge and reheat thoroughly. Ensure it is piping hot before serving.

Celery Baked in Vinaigrette with Pancetta and Shallots
Not suitable for freezing.

Chorizo Hash with Peppers and Paprika
Not suitable for freezing. 

Coarse Country Pate
Make pâté to completion and chill, then cover and wrap well and freeze for up to 2 months. Defrost overnight in the fridge then serve as per the recipe.

Home-made Lemonade
If freezing, use polythene bottles and ensure that there is a headspace of at least 2 inches (5 cm) to allow for expansion. 

Little Croustades filled with Gravadlax and Soured Cream
Not suitable for freezing.

Mini Yorkshire Puddings with Rare Beef and Horseradish and Mustard Crème Fraîche Sauce
Make the Yorkshire puddings then, when they are completely cool, freeze them in a rigid plastic container. Defrost at room temperature before completing the recipe. 

Mozzarella in Carrozza
Not suitable for freezing. 

Piedmont Roasted Peppers
Not suitable for freezing.

Pipérade
Not suitable for freezing. 

Pissaladière
After cooking this, leave it to cool at room temperature. When it is cold, freeze in a sealed polythene bag. Defrost at room temperature before reheating.

Open-freeze the uncooked sausage rolls until solid, then store in a rigid plastic container. Cook from frozen, allowing an extra 10 minutes’ cooking time for defrosting.
