Freezing: Rice-based dishes

 

Some rice dishes freeze well – risotto among them. And it’s worth remembering (when you’ve made too much rice salad for a party!) that leftover rice can be frozen in plastic containers. Defrost it in the fridge before serving or reheating.

Buttery Kedgeree
Not suitable for freezing. 

Chinese Stir-fried Rice
Not suitable for freezing. 

Mixed Smoked Fish Kedgeree with a Crème Fraîche and Parsley Sauce
Not suitable for freezing. 

Oven-baked Risotto Carbonara
Complete the recipe up to the point where you add the pecorino. Leave to cool at room temperature, then freeze in a rigid plastic container for up to 3 months. Defrost in the fridge overnight before reheating, or place the frozen risotto in the oven in a covered dish to heat through gently at gas mark 4, 350°F, 180°C for 20-30 minutes until piping hot. Complete the recipe. 

Oven-baked Smoked Pancetta and Leek Risotto
Cook the risotto and leave it to cool at room temperature. Freeze in a rigid plastic container for up to 3 months. Defrost in the fridge overnight before reheating or place frozen risotto in the oven in a covered dish to heat through gently at gas mark 4, 350°F, 180°C for 20-30 minutes until piping hot. Complete the recipe.

Perfect Rice
Not necessary to freeze; however, leftover rice can be frozen in a container with a tight-fitting lid. Reheat from frozen or thawed in boiling water. 

Risotto alla Milanese
Let the risotto cool before freezing in a rigid plastic container. Defrost in the fridge overnight before reheating or place frozen risotto in the oven in a covered dish to heat through.

Risotto Verde
Let the risotto cool before freezing in a rigid plastic container. Defrost in the fridge overnight before reheating or place frozen risotto in the oven in a covered dish to heat through.

Roasted Vegetable and Brown Rice Gratin
Follow the recipe up until all the components are assembled in the baking dish. At this point allow to cool then freeze completely, sealed in polythene. Cook from frozen as per the recipe allowing an extra 15 minutes for defrosting. 

Slimmers’ Wild Mushroom Risotto
Cook the risotto and leave it to cool at room temperature. Freeze in a rigid plastic container for up to 3 months. Defrost in the fridge overnight before reheating or place frozen risotto in the oven in a covered dish to heat through gently at gas mark 4, 350°F, 180°C for 20-30 minutes until piping hot

Spiced Pilau Rice
Not necessary to freeze this recipe, although leftover rice can be frozen in plastic containers. Defrost in the fridge before serving or reheating.

Not necessary to freeze this recipe, although leftover rice can be frozen in plastic containers. Defrost in the fridge before serving or reheating. 

Stir-fried Rice with Egg and Spring Onions
Not suitable for freezing. 

Thai Green Rice
Not necessary to freeze; however, leftover rice can be frozen in a container with a tight-fitting lid. Reheat from frozen or defrosted.

Tiger Prawn Jambalaya
Not suitable for freezing. 

Very Red Rice
Not necessary to freeze; however, leftover rice can be frozen in a container with a tight-fitting lid. Defrost in the fridge overnight before serving or reheating.
