Lamb Ossobuco with an ‘almost’ Risotto Milanese
Make the ossobucco according to the recipe and cool completely. Freeze in a rigid container with lid (or see general freezing tips) for up to 3 months. Defrost overnight in the fridge and reheat until piping hot. Allow risotto to cool completely before freezing in a rigid plastic container. Defrost in the fridge overnight before reheating, or cook from frozen in a covered ovenproof dish until hot. NB: The gremolata cannot be frozen. 

Lambs' Kidneys in Red Wine
Complete the recipe then leave to cool completely at room temperature. Freeze in a rigid container with lid (or see general freezing tips) for up to 3 months. Defrost overnight in the fridge and gently reheat in a pan until piping hot and cooked through.

La Potée (French Farmhouse Soup with Bacon, Sausage and Beans)
Make the soup, then leave to cool at room temperature. Freeze in a rigid container, leaving enough headspace for expansion, for up to 3 months. Defrost in the fridge overnight and reheat thoroughly. 

Lasagne al Forno
Complete the recipe, then cool completely and freeze in a rigid container with lid (or see general freezing tips) for up to 3 months. Defrost overnight in the fridge and reheat at gas mark 4, 350°F, 180°C for 30-40 minutes until thoroughly hot. Alternatively, assemble the lasagne then freeze; cook from frozen at the recommended temperature for 1 hour or until piping hot. 

Last-Minute Sherry Mincemeat Cake
Complete the recipe. Once cooled, wrap the cake in foil or polythene and freeze in a container with tight-fitting lid for up to 6 months. Defrost at room temperature. 

Latin American Beef Stew with Marinated Red Onion Salad
Complete the recipe. Leave to cool completely at room temperature, then freeze in a rigid container with lid (or see general freezing tips) for up to 3 months. Defrost overnight in the fridge and reheat in the oven until piping hot and cooked through. NB: Do not freeze the salad.

Prepare the lamb so that it’s ready for cooking, then wrap in foil and freeze for up to 3 months. To cook, defrost overnight in the fridge and complete the recipe. NB: Do not freeze the sauce.

Freeze according to the recipe. Keep in the tin or turn out and wrap with foil then return to the freezer for up to 2 months.

Lemon curd will keep for several weeks if stored in a sterilised jar as per the recipe. To freeze, pour into a rigid container with a lid and store for up to 3 months. 

Lemon Meringue Ice Cream
Freeze according to the recipe for up to 2 months. 

Lemon Meringue Pie
Complete the recipe, leave to cool completely then freeze in a sealed polythene bag or a rigid airtight plastic container for up to 3 months. Defrost at room temperature for 2-3 hours. Serve at room temperature or warm through in the oven.

Cook the potatoes for about 15 minutes so that they are slightly undercooked, then freeze in sealed polythene bags. Cook from frozen for about 10 minutes or until tender. Complete the recipe. 

Lemon Ricotta Cheesecake with a Confit of Lemons
Bake the cheesecake as per the recipe and cool completely at room temperature. Open-freeze to prevent damage, until solid. Pack in foil or a polythene freezer bag with cardboard support to prevent damage or a rigid container for up to 2 months. Defrost overnight in the fridge. Prepare and cook the confit and leave to cool, then freeze separately in a plastic container, leaving enough headspace for expansion. Leave the sauce to defrost in the fridge overnight and use to decorate the cheesecake.

Libyan Soup with Couscous
Cook the soup as per the recipe until the stage where the chickpeas are tender. Cool completely, then freeze in a rigid container with lid (or see general freezing tips) for up to 3 months. Defrost overnight in the fridge and gently reheat in a pan until piping hot and cooked through. You can then continue with the rest of the recipe by adding the couscous and chopped herbs and standing for 3 minutes until serving. Garnish as the recipe suggests. 

Light Christmas Pudding
Freeze according to the recipe. Reheat and serve. 

Stuffed Jacket Potatoes with Leeks, Cheddar and Boursin
Bake the cake. Once cooled completely, freeze in a polythene bag that has been sealed well, or in an airtight rigid plastic container, for up to 6 months. Leave the cake to defrost in the bag at room temperature. 

Linguine with Gorgonzola, Pancetta and Wilted Rocket

Cook the apples as per the recipe then allow to cool completely. Once cool, cover with rolled-out pastry and freeze in the tatin tin for up to 3 months. Cook from frozen, adding an extra 15 minutes to defrost.

Freeze the tomato sauce in a rigid plastic container with a tight-fitting lid. Cook the meatballs from frozen in the oven at gas mark 4, 350°F, 180°C; alternatively, they can be pan-fried.
