Freezing: Pizza and gnocchi

 

Most of Delia's pizzas freeze really well, and are a cut above anything you can buy in the supermarket, while gnocchi is a great standby to have in the freezer for easy, quick suppers. 

Basic Pizza Dough
Follow recipe and, after knocking out the air, wrap the dough in oiled clingfilm and wrap in a polythene bag. Seal and freeze for up to 3 months. Defrost overnight in the fridge and continue with the recipe. 

Four Seasons Pizza
Not suitable for freezing. 

Puttanesca Pizza
Freeze the pizza dough rolled out into an uncooked base. The sauce should be frozen separately. The topping is not suitable for freezing. Defrost the dough and the sauce at room temperature, before baking. 

Quattro Formaggi (Four Cheese) Pizza
Freeze the pizza dough rolled out into an uncooked base. The topping is not suitable for freezing. Defrost the dough at room temperature, before baking.

GNOCCHI 

Baked Gnocchi Bolognese
Not suitable for freezing. 

Gnocchi Carbonara
Not suitable for freezing. 

Gnocchi with Parma Ham and Sage
Not suitable for freezing. 

Gnocchi with Sage, Butter and Parmesan
Open-freeze the gnocchi until solid, then pack into polythene bags, seal and freeze. Cook from frozen for 3-5 minutes or until the gnocchi float to the surface. Make the sauce fresh then serve.

Roman Gnocchi
Freeze the gnocchi in a rigid plastic container once it has cooled and you have cut it into fingers. Defrost in the fridge overnight before completing the recipe. 

Semolina Gnocchi with Gorgonzola
Freeze the gnocchi in a rigid plastic container once it has cooled and you have cut it into rounds. Defrost in the fridge overnight before completing the recipe. 

Spinach Gnocchi with Four Cheeses
Open-freeze the gnocchi until solid, then pack into polythene bags, seal and freeze. Cook from frozen for 3-5 minutes or until the gnocchi float to the surface. Make the sauce fresh then serve.
