Freezing: Pickles and preserves

 

Although most pickles and preserves don't freeze well – and, in any case, preserving is its own form of storage – there are a few exceptions, including some of Delia's confits and luscious lemon curd.

Christmas Chutney
Not suitable for freezing. 

Cranberry and Onion Confit
Prepare and cook the confit then leave to cool. Freeze in a plastic container, leaving enough headspace for the sauce to expand once frozen. Freeze for up to 3 months. Leave the confit to defrost in the fridge overnight and serve at room temperature. 

Cranberry and Orange Relish
Prepare and cook the relish and leave to cool Remove the cloves and cinnamon and freeze in a plastic container, leaving enough headspace for the relish to expand once frozen. Leave the sauce to defrost in the fridge overnight and serve at room temperature. 

Dark Apricot and Almond Conserve
Not suitable for freezing. 

Dark Chunky Marmalade
Not suitable for freezing.

Fresh Apricot Preserve
Not suitable for freezing. 

Giardiniere Pickles (Italian Garden Pickles)
Freezing not required/not suitable. 

Gooseberry and Elderflower Preserve
Not suitable for freezing.

Home-made Christmas Mincemeat
Not suitable for freezing. 

Home-made Christmas Mincemeat with Cranberries
Not suitable for freezing. 

Home-made Strawberry Preserve
Not suitable for freezing.

Lemon and Lime Marmalade
Not suitable/necessary to freeze. 

Lemon Curd
Lemon curd will keep for several weeks if stored in a sterilised jar as per the recipe. To freeze, pour into a rigid container with a lid and store for up to 3 months. 

Pickled Beetroot with Shallots
Not necessary to freeze. 

Pickled Limes
Not necessary to freeze.

Pickled Peppers and Courgettes
Not necessary to freeze.

Pickled Shallots in Sherry Vinegar
Not necessary to freeze.

Preserved Pickled Peaches
Not necessary to freeze. 

Preserved Dried Tomatoes
Not necessary to freeze. 

Quick Bramble Jelly
Not suitable for freezing, but it does keep for up to 1 month.

Redcurrant Jelly
No need to freeze. 

Sour Dill Pickles
Not necessary to freeze.
