Freezing: Pasta and noodles

 

Pasta doesn't generally freeze well, but oven-baked dishes such as lasagne and gratins are just made for the freezer! And don't forget that some sauces freeze well too. 

Angel-hair Pasta with Thai Spiced Prawns
Not suitable for freezing.

Asparagus Cannelloni
Not suitable for freezing.

Baked Cannelloni
Bake as per the recipe then leave to cool completely at room temperature. Open-freeze until solid, then wrap well in clingfilm or foil. Freeze for 4-6 months. Defrost overnight in the fridge. To serve hot, reheat covered in foil at gas mark 4, 350°F, 180°C for 30-40 minutes until thoroughly hot. 

Cheat’s Lasagne
Freeze before cooking in the container (or see general freezing tips) for up to 3 months. Defrost overnight in the fridge or cook from frozen at the recommended temperature for 1 hour or until the lasagne is piping hot. 

Gratin of Pasta with Leeks and Bacon
Not suitable for freezing. 

Gratin of Rigatoni with Roasted Vegetables
For best results do not freeze. To freeze the sauce, cool and pour into a rigid plastic container, leaving enough headspace for the sauce to expand once frozen. Leave the sauce to defrost in the fridge overnight and use as in the recipe.

Lasagne al Forno
Complete the recipe, then cool completely and freeze in a rigid container with lid (or see general freezing tips) for up to 3 months. Defrost overnight in the fridge and reheat at gas mark 4, 350°F, 180°C for 30-40 minutes until thoroughly hot. Alternatively, assemble the lasagne then freeze; cook from frozen at the recommended temperature for 1 hour or until piping hot.

Linguine with Gorgonzola, Pancetta and Wilted Rocket
For best results, do not freeze.

Linguine with Mussels and Walnut Parsley Pesto
For best results, do not freeze.

Linguine with Sardines, Chilli and Capers
For best results, do not freeze.

Macaroni Mamma Mia
For best results, do not freeze. 

Orecchiette with Sprouting Broccoli, Pine Nuts and Sultanas
Not suitable for freezing. 

Pad Thai Noodles with Shrimps
Not suitable for freezing. 

Pasta Puttanesca (Tart's Spaghetti)
Not suitable for freezing.

Pasta Vialli
Not suitable/necessary for freezing.

Pasta with Four Cheeses
Not suitable/necessary for freezing. 

Pasta with Pepper Relish
Freeze the pepper relish in a container with a tight-fitting lid. Defrost in the fridge before serving with freshly cooked pasta.

Pasta with Tomato and Mozzarella
Not suitable/necessary for freezing.

Penne with Asparagus and Four Cheeses
Not suitable/necessary for freezing.

Penne with Leeks and Bacon
Not suitable/necessary for freezing. 

Penne with Wild Mushrooms and Crème Fraîche
Not suitable/necessary for freezing.

Rigatoni and Asparagus au Gratin
Complete the recipe up until you combine the ingredients together in a gratin dish. At this point, allow to cool and cover the dish completely with polythene and freeze. Defrost in the fridge overnight before reheating until piping hot.

Seafood Linguine
Not suitable for freezing. 

Sicilian Pasta with Roasted Tomatoes and Aubergines
Once the sauce has been made, allow to cool and freeze in polythene bags or plastic containers, leaving enough headspace for expansion. Defrost overnight in the fridge before using. 

Singapore Stir-fried Noodles
Not suitable for freezing.

Spaghetti alla Carbonara
Not suitable for freezing. 

Spaghetti with Anchovies, Mushrooms and Olives
Not suitable for freezing.

Spaghetti with Olive Oil, Garlic and Chilli
Not suitable for freezing
