Freezing: Egg-based dishes

 

Most egg-based dishes don't freeze well, but there are a few exceptions, as you can see...

A Fricassee of Eggs with Spinach and Fiorentina Sauce
Not suitable for freezing.

A Souffle Omelette with Three Cheeses and Chives
Not suitable for freezing. 

Alpine Eggs
Not suitable for freezing.

Baked Eggs in Wild Mushroom Tartlets
Cool and open-freeze baked, unfilled pastry cases for up to 6 months, packing them into rigid containers for extra protection. Leave at room temperature for 30 minutes before filling and continuing with the recipe.

Broccoli Souffle with Three Cheeses
Not suitable for freezing.

Cashel Blue Soufflé Omelette
Not suitable for freezing.

Cold Poached Egg Salad with Watercress Sauce
Not suitable for freezing.

Egg and Lentil Curry with Coconut and Pickled Lime
Cook the curry to completion, leaving out the lime juice and eggs. Leave to cool, then transfer to a polythene bag and seal well. Freeze for up to 3 months. Defrost in the fridge overnight. Tip into a saucepan and bring to the boil. Cook until piping hot then stir in the lime juice. Meanwhile boil the eggs as per the recipe and serve with the suggested accompaniments.
