Vegetarian menu: green with envy

 

Meat-eaters may well become vegetarians on sight when they see this gorgeous menu for 8: crisp crudités with three divine dips, a salad that combines the Mediterranean flavours of aubergines, tomatoes and feta cheese, and a dessert that will bring sighs of delight from all who eat it.

This is a real celebration of summer – young, fresh salads and crisp vegetables served with three well-flavoured dips.

 Char-grilled Aubergine and Roasted Tomato Salad with Feta Cheese

I am indebted to Chris Payne, who very generously gave me this splendid recipe. If you don't possess a ridged grill pan, you could grill the aubergine slices till nicely browned and tender. Either way, this is a truly delicious combination of textures and flavours.

This is so many people's favourite ice cream – pale green and fragrant, with lovely bits of frozen pistachio to bite into and lovely on its own or served with Pistachio Wafers.
