The perfect spring menu for 8
What could be better than this mouthwatering spring menu, that will be just as good during the summer? Eight people can feast on Turkish stuffed tomatoes, Salmon rosti fish cakes and a vanilla ice cream that's so easy even complete novices can make it!
These are good for a light lunch with salad for four, or this will serve eight as a starter.
I've got a thing about fish cakes: if they appear on a restaurant menu I always order them - and I'm frequently trying to dream up new variations. This one is a real winner. You can make it with any fish; it doesn't have to be salmon.
This has to be the most classic of all ice creams and even complete novices will find it a doddle. Please note that because of the sugar content in condensed milk, this recipe is not suitable for ice cream makers.
