Why?
The best spaghetti.
Isn’t spaghetti spaghetti? Can there be any difference? Well I find that spaghetti extruded through a traditional bronze dye, which gives it a rougher surface texture, is the best quite simply because it makes the sauce stick to it better. It also cooks perfectly al dente.
You may think I am overdoing it here but these things are taken very seriously in Italy. I have always liked Martelli pasta, an artisan brand, but it is not widely available in the UK, so imagine my delight when I found Faella spaghetti in Marks and Spencer (in the Flavours of the World section of the food hall). It comes from Gragnano, near Naples, which is said to be the birthplace of pasta “la citta di pasta”, and has been awarded an IGP (protected geographical origin) much like our Melton Mowbray pie.
On a recent trip to stay in Italy, our friends were cooking spaghetti cacio pepe for supper and on the table was a pack of Faella spaghetti. My Italian friend, Francesca said that was the best but she had to drive to the other side of Milan in order to buy it. I responded that I simply had to go to Marks and Spencer!
You will see at the bottom of the Faella pack “trifolata in bronzo” and this is the magic sign that your sauce will wrap itself around the pasta and hold on for dear life.
