Salmon populations leaping...
Good news for all those who believe fish stocks are irreparably damaged: according to The Guardian, salmon numbers are on the increase in British rivers. The Game and Wildlife Conservation Trust has been monitoring the numbers of fish returning to spawn but no one is exactly sure why this is happening. Thankfully, stocks are returning to levels seen 20 years ago, particularly in the east and north of Scotland, and the Tyne and Wear rivers. Cause for celebration for all of us who enjoy the wonderful flavour of wild salmon: why not try Delia’s recipes?
