Lovely supper menu for 6 at under £2.50 per head!

 

We all want to eat well without spending a fortune, so this month's menu focuses on frugality. You can feed six people for under £2.50 per head on this menu of lovely vegetable soup, slow-cooked beef in cider and individual queen of puddings - all dishes that are British classics. Although Delia does suggest dripping in some of these recipes, you can, of course, substitute oil or a mixture of oil and butter if you find dripping hard to get hold of.  

Starter

Carrot and Leek Soup 
This makes a nice change from the more usual Leek and Potato Soup, provided of course the carrots are not too expensive.

Main course

Beef in Cider 
This is an inexpensive dish, although special enough for a dinner party – quite simply a classic boeuf bourguignon only made with cider and every bit as good.

Individual Queen of Puddings 
think this works well and looks very pretty in individual dishes if you're serving it for a special occasion. Otherwise you can make one large pudding in an oval or round dish, about 2 pints (1.2 litres) capacity. Use a really good jam with a high fruit content. I use Sainsbury's Morello cherry preserve, which is excellent.
