Menu of the month for March

 

Our menu this month is a gorgeous feast, with a starter of Broccoli Souffle with Three Cheeses, followed by Fast Roast Pork and a super Lemon Ricotta Cheesecake to finish off.

What could be more fitting for March!

Starter

Broccoli Soufflé with Three Cheeses 
 
This soufflé is a savoury one made with cheese and a vegetable purée and it's this purée that does a kind of holding operation within, so that this particular soufflé – though it might shrink a little when it comes out of the oven – can never actually fall flat on you. Vegetarians might like to know that a vegetarian parmesan-style cheese is available from www.bookhamcheese.co.uk

 

Main course

Fast Roast Pork with Rosemary and Caramelised Apples 

It's hard to believe that you can serve a roast for six people in about 40 minutes flat from start to finish, but you can, and here it is. It's also outstandingly good, dead simple, can be prepared in advance and, once tried, I'm sure you'll want to make it again and again.

 

Dessert

Lemon Ricotta Cheesecake with a Confit of Lemons 

Desserts are de rigueur on Valentine’s Day, but no one wants to spend the evening in the kitchen. With this in mind, this gorgeous light citrus pudding is made ahead – all you have to remember is to take it out of the freezer a few hours before you want to serve it. Add a few summer berries if you like or leave au naturel.
