Menu of the month: July

 

Nobody wants to spend too much time in the kitchen on a warm day, and our menu this month ensures you won’t have too. A simple Grilled Spanish Onion and Rocket Leaf Salad has minimal cooking, hassle free Salmon Steaks with Avocado and Crème Fraîche Sauce is as easy to make for 4 as it is for 24. Follow all that with Summer Fruit Compote, which can be made well in advance, leaving you in control and out of the kitchen!

Grilled Spanish Onion with Rocket-leaf Salad
I am constantly amazed after all my years of cooking at how there can be anything new – but there always is, again and again. This is an example, utterly simple, yet quite unlike any other salad. If rocket leaves are unavailable, flat-leaf parsley with lamb's lettuce is a good substitute.

Salmon Steaks with Avocado and Creme Fraiche Sauce
If you want to serve something really special for a summer dinner party that leaves you utterly free from any hassle, this cold salmon dish fits the bill perfectly. Although this recipe serves six, you can in fact line up salmon steaks in any number you like – 12 or even 24 – which makes it ideal for buffet parties and celebrations.

Summer Fruit Compote
Any mixture of fruit can be used for this, but remember the flavour of blackcurrants does tend to dominate – so, if you're using them, just use a half-quantity compared with the other fruits. If you want to make the compote entirely with soft berries, it needs only 10 minutes in the oven.
