Menu of the month for January

It's a lean month - at least in monetary terms! So indulge with this lovely menu for 4 that won't break the bank. It's an object lesson in how using ingredients that are in season allows you to spend less than you would by buying expensive imported food at this time of year.

Starter

Spinach Soup with Fontina

We think Italian Fontina cheese, which has a melting creaminess, is the best to use in this soup, but if it's hard to find, Gruyère is equally good.

Main course

Braised Pork with Prunes

This is my version of a famous French classic with the addition of crisp potatoes on top, rather like a hotpot.

Dessert

Rich bread and butter pudding
Never fear if you have some stale bread that needs using up. This is a light delicious pudding with a lovely dark toasted nutmeg crust.
