Of course, the piece de resistance this month will be a roast turkey with all the trimmings. Here’s we’re giving you a slightly different option from Delia’s classic recipes, just in case you fancy a bit of a change! As the main meal is very filling, we’re suggesting that you simply serve the blinis with drinks beforehand. This menu serves 8.


Starter

Nibbles, with champagne before your Christmas dinner 

Russian blinis with smoked salmon and caviar
In the normal scheme of things, cheats don’t do canapés. Far too fiddly and fussy. However, now you can buy cocktail blinis (bite-sized buckwheat pancakes), all this actually involves is a quick assembly job. That said, though, they really do look and taste the business if you want to have friends in for festive drinks. 
 

 

Main course

Roast turkey with American apricot stuffing and apricot Madeira sauce
Turkey is often cooked in the same way, so it's wonderful to break with tradition and go for something completely different. If you've never cooked a turkey before, I guarantee you will be successful!
 

Dessert

Light Christmas pudding 
If there are still people who claim not to like even our splendid Traditional Christmas Pudding, then this could be for them. It's a light sponge pudding containing mincemeat, chopped apple and mace so that the Christmassy flavour is there, and a very attractive arrangement of whole candied peel will look very pretty when it's turned out.
