Somehow the summer months are synonymous with fresh fruit – there’s an abundance of berries out there in what is turning out to be one of the best summers for home-grown fruit. So feast on them while you can, both in this starter and dessert. For the main course, we’re focusing on a truly wonderful monkfish dish that will transport you to the Med in minutes!

This recipe was devised by the late and much-missed restaurateur Peter Langan, who served it in his original restaurant, Odin's, on warm summer evenings. It's unusual, but really sharpens the appetite for something more substantial to follow.

Roasted monkfish with romesco sauce

The pungent, nutty romesco sauce makes a perfect partner to monkfish and this would be an ideal recipe for entertaining.
