Delia's Menu for May

 

Now's the time to turn towards the fresh produce and intense flavours of summer. This menu for 4 is the perfect precursor: Asparagus with Lemon Butter Crumbs to start the meal, then flavourful Chicken Basque - a great recipe that needs no accompaniment. Then, to finish, an impressive yet very easy dessert, Lemon Millefeuille. You could even add a few summer berries to each serving if you feel like it.

This is just to ring the changes from plain melted butter and the crumbs add a lovely crunchy texture. 

 

Main Course

Chicken Basque
The delicious combination of chicken and rice, olives and peppers is typical of all the regions around the western Mediterranean but, to my mind, this Spanish version, with the addition of spicy chorizo sausage and a hint of paprika, beats the lot. 
 

Dessert

 lemon millefeuille

Lemon Millefeuille
This wispy, light, lemony cake (or is it a pudding?) is perfect for spring and simplicity itself to make. The millefeuille – literally 'thousand leaves' in French – refers to the flaky pastry layers, which need to be really crisp and not too thick to provide the proper contrast of textures with the creamy filling.
