Mmm... chocolate! As well as eating it as a pick-me-up sweet treat, chocolate also lends itself to cooking – from glossy chocolate sauce to serve with ice cream or poached pears, to chocolate cakes and classic puddings such as Delia’s Melting Chocolate Puddings , Poires Belle Helene and Hot Chocolate Fudge Sundaes . Or try the super-speedy Cheat’s Chocolate Trifle!  

There are also some fantastic chocolate cake recipes on the site, from Chocolate Fudge Cake (kid yourself it’s a healthy option as it’s made with wholewheat flour!)  to Chocolate Beer Cake, Chocolate Drop Mini Muffins with Red Noses  and Four Nut Brownies.  

Cheesecakes are another way of incorporating chocolate into your dessert repertoire: Delia’s Chocolate Ricotta Cheesecake and Chocolate Mascarpone Cheesecake with Fruit and Nuts  are both totally mouthwatering. And if you prefer something cooler why not try her Miniature Choc Ices?  Delia even has a low-fat chocolate cake recipe: Squidgy Chocolate Cakes with Prunes in Marsala.  

Many cooks steer clear of using chocolate as they’re worried about not being able to melt it properly: in our How to Cook channel, Delia tackles this very method in How to melt chocolate . Those who are not quite so purist can turn to the microwave for help as it’s another way of melting chocolate.

Delia Online’s editor, Jo Hill, also went to interview master chocolatier Paul A Young  who passed on some interesting tips, including what to look for when buying chocolate, and how percentage of cocoa butter solids is actually less important than the quality of the beans used, their source and how they are roasted – and for how long.
