I know there are lots of recipes for the above on the net, but has anyone got a tried and tested recipe for a veggie chilli that they use?

Vegetarian Chilli Con Carne - serves 6ish.
can be frozen.
2tbsp oil.
1 lareg (or 2 medium) red onion, chopped, finely.
2 cloves of garlic, peeled and crushed. (I always add more).
1 red chilli, deseeds and chopped.
1 green chilli, deseeded and chopped.
1 aubergine, chopped into small cubes.
2 couregttes, cut into small cubes.
1 red, yellow and green pepper, deseeded and chopped into small cubes.
2 tins chopped tom's.
a pinch of chilli powder, use to your discretion.
1 tin red kidney beans.
1 tin black eyed beans.
a couple of good squeezes tom puree.
1/2 tsp sugar, to taste, depends on your veg, you may need more.
a good splash of balSAMic vinegar.

Heat oil in a lrage pan, fry the onion and garlic and chillies, for 3-4 mins, or until they begin to soften. Add the aubergine and fry for 5-8 mins, until it turns a nice pale gold colour, add the courgette and the peppers and fry for a further 8 mins. Add the tom's and the the beans, the chilli powder, the tom puree, sugar, vinegar and season to taste. Cook covered on a low heat for 10 mins, then remove the lid and continue to cook for a further 15 mins, the sauce should have thickened, if not leave to gently simmer for a bit longer.

opps just read through it, add one teasponn of ground cumin, at the same stage as the chilli powder.

I just do my normal chilli and use quorn mince instead of beef mince.
