I am looking to make selveral cakes for a fund raising coffee morning. The only problem is they need to be left out for a bit - cannot regrigerate! Any suggestions? Thanks. (Also need a good recipe for chocolate brownies - thanks!).

the recipe i have for chocolate brownies is delightful and has a little twist...

Makes 16:

150gm butter
225gm quality dark chocolate
10 cardamom pods, deseeded
2 free range eggs
225 caster sugar
1 inch whole vanilla (or 1 tsp extract)
75 gm self raising flour
100gm pistachio nuts
Preheat the oven to 180 Degree C (160 for fan assisted). In a large microwaveable bowl, break the chocolate pieces and cube the butter. Stick it in on medium heat for three minutes until lumpy but melted.

Crush the cardamom with the whole vanilla in a coffee grinder or pestle and mortar. Add this to the bowl and mix thoroughly until smooth.

Now, lightly beat the eggs and stir them into the chocolate along with the sugar. Then fold in the flour and the peeled pistachio nuts gently.

I used salted pistachios, which I shelled myself. If you used the shelled, unsalted variety add a pinch of salt to the batter.

Take a rectangular /square baking dish that is at least an inch deep.

bake the whole lot for 30 minutes.

After 30 minutes, take the dish out of the oven, leave to cool and then refridgerate for two hours until set. Cut into rectangular pieces and enjoy on their own or with Vanilla ice cream.

A ggod thing to do is to "Batch Bake". Make up a big batch of sponge mixture, then flavour, coffee, chocolate plain vanilla sponge etc.
Little cakes also usually sell well too, where people don't maybe want to buy a big cake they will have some smaller ones. So, butterfly cakes, little bakewell tarts, with sponmge mix on top and a few almonds.
I used to do Vienniese whirls mix piped into fingers, sandwiched together with a little buttercream then the ends dipped in chocolate. They usually went first!

P.S. I have a recipe for a Millionaire shortbread which is a cheaty one on my profile. Also a banana loaf which keeps well too.

Best Ever Brownies
Ingredients
120g best chocolate, at least 51% cocoa
2 tbs cocoa powder
120g butter
2 large eggs, beaten
240g granulated sugar
60g plain flour
1 teaspoon baking powder
Pinch salt

Pre-heat oven to GM4, 350°F, 180°C, 160° Elec Circo

Method
1. Break chocolate into pieces and melt in a bowl over saucepan filled with simmering water. Add cocoa powder and butter.

2. Stir mixture occasionally. When melted, remove from heat and add to other ingredients. Mix thoroughly.

3. Pour into lined square tin (20cm by 20cm) and bake in centre of oven for 30 minutes. The brownies will be ready when the mixture has sunk down. They should still be gooey.

4. Allow to cool before cutting into squares.

I have a few tray bake cake receipes on my profile that are easy to make. I bake them for our school fetes and they always sell well.

Have a look at Irish Fruit Cake on my Profile, its v.moist , quyick to make and keeps a week or so. Ginger loaf cakes generally benefit by making several days in advance. Flapjacks keep very well in a tin.
