Do i cook them from frozen or defrost first? If cook from frozen-roughly how long do you think they would take to cook?

I guess it depends on how big you make them & how much filling is in them.
Personally I defrost pies & pasties etc, then egg-wash & cook as per the recipe.
If you decide to cook from frozen, they'll need longer than the recipe says, but you may want to turn the oven down or lightly cover with foil if they look like they're getting too brown.
I agree with Joy, defrost first, or you could end up with really brown edges and the middle not cooked,
