I have a roll of puff pastry in the freezer which i want to use to make cheese & onion pasties. If i take it out and defrost it, then make the pasties, can i then re freeze the pasties? I am not sure as you aren't supposed to refree things after thawing? Also if i can, should i freeze them before or after cooking?

I regularly re-freeze uncooked pastry, will never any ill effects. I keep my pastry in the freezer and don't know how much I'll need for a pie. The surplus is returned to freezer. I've done this for many decades. I haven't frozen cooked pasties but I can see no reason not to. You're not going to re-freeze the filling, after all.

I too re-freeze uncooked pastry, there's not a lot to give you salmonella in a packet of Jusroll, and I never have it out for more that a few hours thawing and preparing time.

I do it all the time, defrost, make pies, pasties or puds, then re-freeze it from uncooked.

We are all still here to live to see another day!
