I made Gary Rhodes salmon fishcakes recipe and they were lovely but not keen on the lemon butter sauce he serves with them. Can anyone give me a different accompaniment. And does anyone have another fishcake recipes they can recommend.
Hi Fusspot. A parsley and chive or hollandaise sauce would go rather well but I personally just have a bit of tartar sauce with them. Luv, Loopy XXXX
How about a dill sauce.
Cod/Haddock fish cakes
450g skinless cod/haddock
2 bay leaves
150ml milk
350g floury potatoes
½ tsp finely grated lemon zest
1 tbsp chopped parsley/chives
1 egg
Flour for shaping
85g breadcrumbs
3-4 tbsp vegetable oil for frying
Tartare sauce ( cheats jar of)
Lay fish and bay leaves in a frying pan, pour over the milk and 150ml of water. Cover, bring to boil, then lower the heat and simmer for 10mins.
Peel and chop the potatoes and simmer in boiling water for 10mins until tender.
Lift out fish from milk and allow to cool. Drain potatoes and leave for a couple of minutes. Tip the potatoes back into the hot pan, on the lowest heat you can and let them dry out for 1minute. Mash the potatoes (I use a ricer).
If using tartare sauce then add 1 tbsp to the mash together with the lemon zest, parsley and chives and mix.
Flake the fish into big chunks, adding to the mash. Gently mix fish and mash together with your hands.
Divide fishcakes into four burgers, dust with flour, cover with the beaten egg, then dip in the breadcrumbs. Chill the fishcakes for a minimum of 30minutes in the fridge.
Fry the fishcakes in the oil on medium heat for about 5minutes each side.
how about coriander fish cakes with dipping sauce
using a cod fillet and a salmon fillet, the dipping sauce is made up of, rice vinegar, sugar and chillies.
