I am making my daughters wedding cake, the wedding being at the end of September . This will be a fruit cake.- how long beforehand does this need to be made?. I have had various answers from 6 weeks to 6 months.

Shelly, depends on whether you intend to use alcohol such as brandy or rum to flavour the cake. If you are using alcohol, then best to make cake several weeks before use so that you can add the alcohol in stages.

If you look on the www.joyofbaking.com site it will guide you through the process.

Shelly, I make my christmas cake 3 months before christmas so I should think that your wedding cake would be fine if you made it months rather than weeks before, especially if you want to add the alcohol in stages
I feed my christmas cake every two weeks after having made it up until I need to put the marzipan on. I hope this is helpful to you. Best Wishes SMB
