This might actually be a very simple solution but in my current state (about to have a baby), I can't think of an alternative........ my au pair is Turkish (Muslim) and he doesn't drink alcohol, what can I use in my recipes instead of wine that will give the same or similar flavour ?!

apple juice is very good substitue for white wine.
red grape juice for red wine.
orange juice for "hard drink" ie brandy, whisky etc.
for meat dishes, just use good quality veg or chicken stock, don;t know if muslims eat beef, but good beef stock also.
You can get non alcoholic red and white wines, don't use cooking wines as they are loaded with sodium.
I just tend to use veggie or chicken (or whatever) stock when I don't want to use wine in a savoury dish. The problem with fruit juices is that they may be a bit too sweet for a meat dish. However, if you want to substitute wine in a dessert recipe, then fruit juice will be fine.
The alcohol's driven off when it's cooked. Anyway, I've heard that bread contains traces of alcohol, don't know if it's true and how it fits in with the previous.
