Hello Everyone
I have a friend who has an allergy to eggs and would like a recipe for Carrot Cake without eggs. I have searched the INet for weeks and they all have from 1 - 5 eggs or at least egg whites. My own huge collection of recipes says I could use Buttermilk (Laban here in the Middle East) and it does a fine job. Does anyone have a better idea? Thanks J from Bahrain

I have got this in my collection of recipes. I have not tried it yet but it is worth a try.

Carrot and Sultana Cake.

Makes 500 gm cake.

25o carrots
250 whole wheat flour
1 tbs baking powder
60 gms sultanas
125 gms margarine
125 raw demerara sugar
1 tbs sesame seeds

Clean top and tail (and if necessary peel) the carrots then coarsely grate them and set them aside.

Put the flour, baking powder and sultanas in a mixing-bowl and mix thoroughly.

Melt the margarine in a small saucepan over a low heat then add the sugar and stir until dissolved. Remove from heat and pour over the flour mixture.

Add the grated carrots and mix well in.

Transfer the cake mixture to a small lightly greased cake or break tin and sprinkle the sesame seeds on top and bake for about 50 minutes in a warm oven (163°C /325°F /gas mark 3) till a knife inserted in the centre comes out cleanly.

Allow to cool before removing from tin.

I have this recipe from Sarah Brown which I often make and which is unfailingly delicious:

225g plain wholemeal flour
1 tablespoon cinnamon
1 teaspoon nutmeg
0.5 tablespoon baking powder
110 g butter
110g honey
110g sugar
225g carrots, peeled and finely grated

1. Mix together flour, spices and baking powder in large bowl

2. Melt together butter, honey and sugar in small pan, then add to flour mixture, stirring well to mix thoroughly

3. Stir in grated carrots

4. Put mixture into well greased 1lb loaf tin and bake on 170 for 60 to 80 minutes, until a skewer inserted into the centre comes out clean.

5. Leave to cool in tin for 10 minutes then turn out onto cooling tray.

6. Slice, eat and enjoy!
