We made this tonight and it was absolutely delicious. So easy and quick! My chopper just arrived from Lakeland and i love it. I know we can all chop onions, press garlic etc, but this makes it fun! I am going to do the other "how to cheat" risotto at the weekend. I always thought risotto was dull but i am a total convert! Any other ideas for what to put in one?
I sometimes put chicken and chorizo in mine, also nice fresh garden peas when theyre in season is delish.

Delia does a mushroom baked risotto in her veggie book that's nice too, with Marsala wine. None of that pesky stirring!
I love Rissotto's too. I have a Jamie receipe for a bacon, pea and goats cheese one, it's delicious. I've even served small portions of it as a starter! yum yum! x
Thanks for all your lovely ideas for the risotto. I shall try them all, its just such a lovely easy and tast supper. I have to say the "how to cheat" has several recipes with chorizo in that i enjoy so will definitely try that one but they all sound nice. Tomorrow i am doing the beef bourgignon for my sister so will let you know how i go on!
