Just thought I would add that I got my chorizo out of the fridge a bit too early last night and the skins were really difficult to get off!!!!
I spend ages and ages removing the papery skin from mine! its a pain isn't. Delia should have made mention of this in her book, but the end result is gorgeous.
First time I've had the problem...thought it was the temperature as they were too soft to slice neatly as well.
Oh, when we lived in Spain my OH used to eat them with the skins on, no wonder he called them donkeys' kn....s

I must say I never bother peeling the skin off either - far too fiddly. My theory is if it's that difficult to take off it wasn't intended to in the first place?
