Made these yesterday as had friends coming round
What a cheap but stunning dish -tin of salmon only cost 80p. Left out capers cos son would object but it still tasted wonderful
Definately making these again - my friend was very impressed and even had seconds (oh had fourhs!!!)
Also the Watercress mayonnaise that goes with it is to DIE for -one of the most delicious i have ever tried -will be making that again. Had some leftovers so put it in a tuna sandwich for my lunch

This is one of my favourite HTC recipes Jools. And I agree - the mayonnaise really makes it! I've made them a couple of times now and it will be a regular.

Thanks for that girls, I didn't bother with the mayonnaise but I will do next time. Must confess though that I always take the skin and bones off the salmon and give them to next door's cat, which is v naughty of me because they're full of calcium and keep the osteoporosis away!

As we don't much care for the tinned salmon, I made this with fresh and it was really good. Will have to try the watercress mayonnaise as Waitrose never had any when I made the cakes.

Could someone please give me the details of the watercress mayo sauce please - i've just read this thread and it sounds lovely.

Hi Colgirl, I did copy a recipe out of the new book for someone who asked on this site a few weeks ago, but it was deleted for copyright reasons. This is only fair really, as it is still a new book, and I strongly recommend you have a look at a copy - you'll buy it !
