dish 1....I made with pork shoulder steaks....a bit tougher than what delia recommends, but i found if you whack the heat to 180c, and cook for 2 hours,,,,, perfect, and the fat melts away. Also my pork shoulder steaks came in a pack that was 800g (double delias recommendation) so i added another glass of wine, and a tin of chopped tom's..... wow weeeeeeeee delicious.
dish 2) made this once before, had half a tin of coconunt milk left, so i froze it......had one of those rotisserie chickens from the supermarket...it didn;t all go, so i just pulled it apart and had more than enough chicken to make this dish.......it actually taste better tham when i made it the first time round!
So 2 dishes i have already raved about, have already got a bigger thumbs up!

Sam. my memory is going. last week I made a dish which should have taken pork shoulder - I used pork chops and they just didn`t work. They didn`t break down. What was the dish.? It was in HTC and wasn`t the Spanish stew cause I made that yesterday and it was delicious.
Karen probably the burgundian braised pork with borlotti beans.....
If it was then its probably gone wrong, beacuse it slow braises and pork chops are much leaner than shoulder (not enough fat) to keep the meat moist during the long slow braise.
I think thats sort of the reason....cos its like beef, when you braise or stew that, you look for really marbly semi sort of fatty bits, as it all oozes away and makes the meat much more succulent.
