Wood pigeon Key facts The wood pigeon used to be widely eaten, but these days it seems to have fallen from grace - a shame as it's a very rewarding bird to cook. There are many species of pigeon - the city rock pigeon was formerly domesticated but is now wild.

These are small but are the least expensive of all game birds, serving one per person, unless they are very large.

It's really only the breast that's eaten and I favour braising, as in Braised Wood Pigeon with Cider Apple Sauce
