Key facts
If using vanilla pods, afterwards bury them in a jar of caster sugar to infuse the sugar with wonderful vanilla flavour. Vanilla was brought to Europe by the Spanish explorer Cortez, who was introduced to it in Mexico. Vanilla is mainly Mexican, Tahitian, Madagascan and Bourbon.

As you'd expect, this is extracted from pure vanilla pods and not made synthetically (extract is the key word; essence is not the same thing).

It's very useful for sauces, custards and a million-and-one sweet dishes or wherever a touch of vanilla flavour is required.
