Red kidney beans
Not surprisingly, these shiny-polished beans are both red and kidney-shaped. They have a delicious flavour, a must for chilli con carne. They make a good salad and will adapt themselves to any recipe for bean soup.
At one time there was a 'scare' about them causing tummy upsets. It was caused, simply and solely, because they were not being cooked properly. Provided they are boiled for at least 10 minutes before soaking, there won't ever be a problem.

I've suggested two ways of cooking this delicious, spicy main meal: you can either cook it in the traditional way in a slow oven, or (if you want to cut down on gas or electricity) it can be done on top of the stove by using a little more liquid.
