 Fennel leaves

Garden fennel is a fern-like green herb with quite a pronounced aniseed flavour (just as strong as that of bulb fennel).

It’s good in sauces or stuffing for fish. An interesting variation on the Italian Baked Fish recipe is to add a dessertspoon of chopped fennel leaves to the tomato sauce before pouring it over the fish for baking.

Italian Baked Fish
