Cabbages are king of the crop this month, but root veg gets a look in too, as does game, oily fish such as sprats and herrings, venison and slow-cook cuts of meat.
Cabbages, celeriac, parsnips, carrots, turnips, kale and Brussels sprouts: make the most of these lovely vegetables with bakes, casseroles and side dishes packed with winter flavour. On the seafood front, both scallops and oysters are good in January, as is John Dory, while guinea fowl is top of the pops for poultry.
