We're slowly emerging from winter so perk up your cooking with new leaves, spring carrots, watercress and herbs.

As the earth begins to warm up after the long winter, a host of crops appears to gladden the heart: new potatoes, watercress, herbs, new-season carrots, not to mention spring lamb and, later on towards summer, crab, asparagus and salad leaves.
