Watercress
| Key facts |
|---|
Popular with everyone, watercress is a bit like rocket, with its own distinctive, fresh, peppery flavour.
I think it's too strong to be used on its own, but it's wonderful combined with lettuce, used as a garnish and for giving its own unmatched flavour to soups and sauces.
Serves 2Bloody Mary Soup
A spicy low-fat soup that has a lovely kick of Tabasco and balsamic to complement the tomatoes. You can even add a shot of vodka if you've a mind to!
Serves 4-6Fish Cakes with Capers
Classic fishcakes are wonderfully frugal food, as they allow you to 'stretch' 1lb of fish to serve 4-6 people. And who's complaining with recipes as good as this, pepped up with the addition of capers, parsley and cayenne?
Serves 6-8 as a main courseAmerican Chef's Salad
With 30% of food being thrown away, this recipe is a good way of making sure you use up those odds and ends in the salad drawer, plus any bits of cured meat lying around! Use whatever you like - or try Delia's favourite combinations.
Serves 2Tiger Prawn Risotto with Lobster Sauce
Prawns, lobster bisque, Gruyere cheese and sherry combine perfectly in this easy cheat's version of a risotto - baked in the oven, so no tedious stirring! Yet what could be more luxurious than this at a special meal for two?
Serves 6 as a starterBaked Salmon and Sorrel Creams
These lovely, light creams are best made in early summer when sorrel is in season - or grown your own if you prefer. Sorrel adds a lemony lightness to recipes and goes really well with salmon but if you can't find it, use spinach instead.
