Countdown to Christmas

Yes, that's right we've mentioned the word - Christmas.

You might think it's a bit too early, but if you want a stress-free, relaxed Christmas you need to do one thing now, and that is to sit down and make a plan. Once done, you will be surprised at how easy it will become and as Delia says, "work that's planned with calm and control becomes a pleasure instead of a pressure, and you don't end up in a heap on Christmas afternoon".

So, take a look at our Christmas with Delia Online and let us help you through the next few months...

Shallow Fried Fish alternate h1189-oven-chunky-chips-18918 Cod - back on the menu

Today the Marine Conservation Society announced that North Sea cod has been taken off their endangered list. Stocks have returned to a sustainable figure, meaning the fish can be bought and eaten occasionally, so you can now buy British fish caught by British fishermen.

Delia's shallow fried fish recipe is quick and easy to make and a perfect way to cook cod fillets. Then all you need is some homemade chips and tartare sauce, plenty of salt and vinegar and you will have a true British supper.

One of the great things about cake making is you can keep it as simple or fancy as you like, so choose your favourite kind, chocolate, fruit, sponge, loaf or even a little cake and get into the kitchen this weekend.

Guinea Fowl

If you've tried Delia's recipe for Chicken Baked with 30 Cloves of Garlic, you will know that the garlic flavour is not over powering after its long slow simmer. For a true 'in season' ingredient ring the changes using guinea fowl. Its slightly gamey flavour gives it great depth and only needs fluffy mashed potato served as an accompaniment.

A great alternative to apples in crumble, blackberries also make a perfect filling for a pie, tarts and jelly. Sweet and juicy, the best are always wild and worth getting scratched hands for if you are out blackberrying, but if you aren't feeling quite so adventurous, there are plenty in supermarkets and farm shops at the moment. Here we have three great recipes for you to try.
