Sausages with Chilli Sauce

Printed in the 70's, Delia's book Frugal Food didn't have many pictures. However the recipes are still as good today as they were then, so we have included some on the site with generic photographs.

Sausages with Chilli Sauce
 1 lb (450 g) pork sausages
 1 whole fresh red chilli (or ¼ teaspoon chilli powder)
 1 tablespoon olive oil
 1 onion, peeled and chopped
 1 small green pepper, deseeded and diced
 2 cloves garlic, crushed
 1 x 14 oz (400 g) can Italian tomatoes
 1 teaspoon dried basil
 ¼ teaspoon sugar
 1 teaspoon tomato puree
 Salt and freshly milled black pepper


Begin by de-seeding the chilli (if using a whole one), discarding the fiery seeds and chopping the red part finely. 

Now heat the oil in a flameproof casserole or saucepan, brown the sausages all round and, using a draining spoon, remove them from the pan.

Next stir the onion, green pepper and garlic into the fat remaining in the pan and cook gently until softened (about 10 minutes). 

Now stir in the remaining ingredients, bring up to simmering point, then return the sausages to the pan.

Allow it to simmer very gently, uncovered, stirring occasionally, for about 25 minutes until the tomatoes are reduced to a thick, sauce-like consistency. Then taste and season with salt and pepper before serving.

This is very good with buttered noodles or creamy mashed potato.
