There's something communal about making a cake, and to know that buying ingredients from small suppliers around the world whose livelihoods depend on it is very satisfying.  I am a huge supporter of the Fairtrade movement and, wherever possible, we have used their ingredients (dried fruits, sugars, vanilla extract and so on) which also happen to be superb quality.
